Pumpkin Spice Cupcakes
Who doesn’t love a good fall healthy recipe? These pumpkin spice cupcakes are sure to win over the whole family.
Pre-Heat oven to 375 Degrees
What you need:
Dry Ingredients
- 1 3/4 Cup Gluten Free Flour
- 1 1/2 tsp baking powder
- 1/2 tsp sea salt
- 2 tsp Pumpkin Pie Spice
Wet Ingredients:
- 1 1/2 cup organic pumpkin puree
- 1/2 cup unsweetened coconut beverage
- 2 eggs
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- Mix dry ingredients together
- Mix wet ingredients together
- Mix dry items with wet items until fully mixed
- Place about 2 Tbsp of mixture into cupcake pans
- Cook for about 20-25 minutes and let fully cool
Frosting
- 1/4 cup coconut sugar
- 1/4 + 3 Tbsp Coconut Beverage
- 2 packs Pumpkin Spice Shakeology
- 1/2 Cup Whipped Cream Cheese
Mix well with hand blender and place on cool cupcakes
Container Equivalent:
- 1 1/2 Yellow
- 1/2 Blue
- 1 tsp
